Middle-Eastern style Shish Kebab and Tikka, limited seasoning approach that allows the flavours of the meat to dominate.
Typically eaten with flatbread such as Lebanese bread, Iraqi Khubz, Pita, Armenian Lavash or Naan. Greek or Tabbouleh salad to compliment.
Tikka
Ingredients
- Lamb leg
- Salt
- Black Pepper
- Olive oil
- Red Capsicum
- Green Capsicum
- Brown Onion
1/ Dice the Lamb leg into medium sized cubes.
2/ Season the cubes with salt, pepper and olive oil.
3/ Dice the red/green Capsicum and onion into pieces to skewer between the lamb cubes.
4/ Proceed to skewer in the format of lamb-green capsicum-red capsicum-onion-lamb.
5/ Load the skewers into the Artisan Tandoor oven (providing it is ready for cooking). Approximate cooking time is 10-15 minutes.
Shish Kebab
Ingredients (for 9 skewers)
- 1 kg Lamb mince
- Parsley
- 1 Onion
- Salt
- Black Pepper
- Sumac powder
- 1tbsp plain flour
1/ Chop the parsley and onion finely.
2/ Place the mince, onion and parsley in a bowl.
3/ Season with salt, pepper and sumac.
4/ Add 1 tbsp plain flour for binding purposes and mix well.
5/ Take a hand sized ball of the mixture and straighten out along the skewer.
6/ Load the Artisan Tandoor oven (providing it is ready for cooking) with the Shish Kebab skewers. Approximate cooking time is 10-15 minutes.
7/ Before serving, sprinkle the Shish Kebabs with Sumac.
