Skewered stuffed vegetables is a traditional dish from Armenia in the Caucasus region of Asia minor. The dish is cooked in the Armenian Tonir (Tandoor).
In Armenia, the filling is typically comprised of 50% Pork and 50% Lamb mince, you may however use Pork, Lamb and Beef alone or a combination of two.
Ingredients
- Pork, Lamb or Beef mince
- Parsley
- Brown Onion
- Garlic Cloves
- Hot Green Chilli
- Eggplants
- Zucchinis
- Horn Chilli
- Capsicum
- Salt
- Black Pepper
Preparation
1/ Finely dice the Parsley, Onion, Garlic and green Chilli.
2/ Combine the diced elements from step 1 with the chosen mince meat. Add salt and black pepper.
3/ Thoroughly mix the mince together, to ensure even dispersion of salt/pepper and diced elements.
4/ Halve your Eggplant and Zucchinis, proceed to scoop the flesh out from inside.
5/ Cut the top of the Capsicum and Horn chilli, remove the seeds from inside.
6/ Fill the vegetables with the mince mixture, make sure it is tightly compacted.
7/ Skewer the vegetables vertically through the middle.
8/ Load your Artisan Tandoor oven with the skewers.
9/ Cooking time is approximately 10-15 minutes.
