Khorovats (խորոված) is an ancient style of Armenian barbecued skewered meats.
It can be made with Lamb, Pork, Beef, Chicken or Veal.
In Armenia, Khorovats is generally reserved for special occasions. such as Vardavar (water festival), Birthdays and Weddings.
Large chunky cuts of meat are skewered and cooked on a mangal (open charcoal bbq) or inside an Armenian Tonir (Tandoor).
This version of Khorovats is made using Pork belly wrapped around potatoes and onions.
Ingredients
- Pork belly
- Whole potatoes
- Whole brown onions
- Salt
- Pepper
- Paprika
- Chilli Powder or paste
- Olive oil
Preparation
- Cut strips of Pork belly into 3-5cm width (depending on the size of your potatoes and onions, as the Pork strips will be wrapped around)
2. Season Pork belly strips with salt, pepper and paprika.
3. Place Pork belly strips around the potatoes and onions, enter skewer through the Pork belly and potato/onion.
4. Create marinade by mixing Chilli powder/paste with olive oil, paprika, pepper and salt.
5. Place skewers into Artisan Tandoor oven and paste periodically with the marinade.
